It’s that time of year when the herbs start getting fragrant and every farmers market is selling adorable organic herb plants – I cant help but want them all. (I can’t be the only one who finds potted herbs cute…)
Once you get them home… what the heck do you do with them? They grow like crazy and my dreams of making vegan margarita pizza every night are quickly being shattered.
So I’ve recently started making this super simple (and super healthy) basil pesto to help harvest some of the basil leaves & I’ve been using it in everything from pesto pasta to slathering it on chicken.
I love getting more basil in my life because it’s jam packed with antioxidants and minerals like magnesium, potassium and calcium
here’s what you’ll need:
3 cups basil
1/2 cup nutritional yeast*
1/3 cup olive oil
2 cloves of garlic
1/2 cup pine nuts
chili flakes (to your taste)
*Nutritional Yeast is a vegetarian source of B12, is high in protein fiber and folic acid & it tastes like cheese (Seriously you need to get your hands on this stuff).
here’s what you’ll do
1. Add everything except oil into the food processor
2. Add oil while blending until its your desired consistency
3. SLATHER ON EVERYTHING
It seriously takes about 5 minutes & using it makes you feel like some gourmet chef.
